The project became an exercise in renewal — carefully preserving what gave the place its identity while introducing a new way of living within it. The landscape was revitalised, the architecture given a new purpose, and the existing beauty allowed to become part of the experience.

There is a sense of continuity in the culinary philosophy shared by La Darbia Chianti and La Darbia Lake Orta. The two properties may belong to very different landscapes — the rolling hills of Chianti and the still waters of Lake Orta — but both take the same approach: food should be inseparable from its surroundings, shaped by local produce, regional traditions and the rhythm of the seasons.
At the heart of this connection is the chef Matteo Monfrinotti, who has passed his knowledge and approach to a younger generation. His sous-chef at Lake Orta, chef Sebastiano Pagliaro, now brings that experience to Chianti, working alongside him to develop a menu that speaks to its new setting.
